milos Estiatorio is part of the Milos restaurant chain from Montreal. It's the only Greek restaurant in Marina Bay Sands- if you're not set on eating Greek food, here's an overview of the best restaurants in Marina Bay Sands. (I visited them all personally before reviewing them.)
Opened in July 2024, milos Estiatorio has been open for a while I actually meant to review it when it first opened, but the menu just didn't tempt me so I left it till today- a mistake! I wish I had started visiting it earlier!
Location
milos Estiatorio took over the old site of Daniel Boulud, and is located opposite the Theatre and KOMA, within the Marina Bay Sands Shoppes (shopping centre.)
Food


The focus here is on the ingredients (and the food is priced to match- more on this below.)
I enjoyed my meals here, but not all the dishes were amazing. In fact- controversial take here- my Mother and I both weren't that keen on their grilled fish. We both felt that it didn't have enough char. However, I think this is probably a characteristic of Mediterranean cuisine as I felt the same about the fish I ate in Portugal.


We did enjoy their salt-baked fish, carabineros (not cheap), grilled salmon and grilled octopus though.


The salmon and octopus 2 were well-charred- in fact I LOVE the octopus (but unfortunately have decided to give it up due to how sentient and intelligent octopi are.)

Similarly, the grilled mushrooms and grilled vegetables were not particularly memorable: they weren't as well-grilled as the ones we had at Ally on 25 in Andaz Singapore.

The sea bass ceviche starter (Lavraki) and grilled shrimp were both exceptional though.


The highlight is definitely the Greek yogurt ice cream which is both light and creamy. The regular Greek yogurt is not bad too.
Ambience

This is definitely an upscale restaurant, with an "ingredients market." Personally I'm not a fan of the interiors as it strikes me as quite cold.
You can see the fresh vegetables displayed to your right when you walk in.
Further inside is the seafood market, where the wild-caught fish is on display, and the grilling stations behind it. Despite the grills being inside, you don't find the area smoky and your clothes don't smell at all. (You're invited to go up and choose for yourself if you want to eat fish.)
Seniors' Tip: There is a ramp for wheelchair friendly access (and inaccessible bathroom.) However, the tables in the restaurant are quite close to each other, so I recommend letting the restaurant know before visiting to ensure they can make the appropriate arrangements.
Service
Service is warm and friendly but it sometimes felt like they lacked a system. (For example, more than 1 waiter would come over to ask us exactly the same thing (e.g. what we want to drink.)
Let them know if you're celebrating a special occasion (when booking) and they'll give you a complimentary cake!
Pricing
The lunch set here is great value ($68++ per person or about $169 for 2 people.)
However, this is definitely not a place to visit if you're concerned about cost. In fact, this was 1 of the reasons I took so long to review the restaurant: for example, (as is common in seafood restaurants) there is no price indicated next to the fish in the menu. Instead, you visit the seafood counter, and the cost per weight is indicated. After you choose a fish, they will weigh it and let you know how much it comes up to.
I imagine it's quite awkward to say "too expensive" and ask them to change the fish, so it's best to visit if you are in a position to not worry about the price! For your reference, we paid $190 for a small St. Pierre fish (this is 1 of their cheaper dishes.) To make this a large enough meal for 2, we had to order 3 sides/ starters to go with the fish, and the entire bill came up to slightly over $300 (without drinks.)
